Kick off valentines day the right way with this twist on your morning eggs and bacon. Avocado wrapped in crispy pancetta is a match made in heaven for egg dipping whether you chose to share it with the other half or not! For a vegetarian substitute, wrap the avocado in mozzarella slices instead for a cheesy, gooey fix.
4 tsp. mayonnaise
2 slice white sandwich bread
1 tbsp. butter
2 large eggs
Finely chopped capers
Finely chopped fresh parsly
Avocado Bacon Soldiers:
1 tbsp vegetable oil
1 ripe avocado, cut into slices
100g smoked pancetta rashers
To make the bacon avocado soldiers, heat the oil in a non-stick pan and wrap each avocado slice in pancetta. Fry for 2-3 mins over a high heat until cooked and crisp.
Moving onto the love toasts, spread mayonnaise on both sides of 2 slices white sandwich bread. With a medium heart-shaped cookie cutter, cut centers from bread.
In 12-inch nonstick skillet, melt butter on medium. Add bread (and centers) to skillet. Cook 5 minutes or until golden brown.
Turn bread over. To each heart-shaped hole, add 1 large egg; sprinkle eggs with pinch of salt and pepper. Reduce heat to medium-low. Cook 5 to 7 minutes, or until whites are set. Sprinkle with finely chopped capers and parsley. Dip the avo soldier into the egg and enjoy!
