Papaya, carrot and red pepper stir fry
Add an exotic twist to you bog standard dinners with this quick, colourful stir fry. The dashi stock can be easily purchased in Asian supermarkets or in some larger conventional supermarkets. Add any left over veg that needs to be used up to complete this humble yet hearty dish!
1/2 Small papaya
1 Red pepper
1/3 bunch Chinese chives
tsp Bonito-based dashi stock granules
1 tsp Soy sauce
Cut the papaya in half, remove the seeds and peel the skin, cut into thin strips. Julienne the carrots and green pepper and cut the Chinese chives to the same length as the other vegetables.
Cut the Spam into matchsticks.
Pour a dessert spoon of seasame oil into a skillet or wok, and stir-fry the green pepper and carrot over high heat. Once the green pepper and carrots have softened, add the papaya and continue to cook.
Once the ingredients are cooked through, add the Chinese chives and cook until tender
Add the bonito-based dashi stock granules and soy sauce and cook them briefly until fragrant.
Garnish with finely chopped Chinese chives and serve with steamed rice.
